Food Philosophy
Our philosophy at the Roman Empire is simple – quality food made in-house from the freshest ingredients, with great service and a friendly atmosphere. We use the freshest ingredients, with Roberto selecting our produce from local markets. Our chefs make everything in-house from our gnocchi to our custard filled cannoli.
Passion for Food
Chef and owner Roberto has been cooking professionally since 1997, starting his career in Noosa and Mooloolaba before moving to Brisbane in 2004. He developed a passion for cooking and creating great food at a young age. His visits to both his Nonnas’ kitchens inspired his love of traditional Italian cooking. Nonna Nina’s recipes were hearty, full of slow cooked meat and fresh vegetables picked from her garden. Nonna Pirrello’s recipes were full of fresh seafood, caught by Nonno Pirrello.
Though their styles of cooking were different, both his Nonnas inspired Roberto with their traditional recipes and love of fresh product. Roberto loves to experience food from different people and different backgrounds to see how their techniques can improve the quality of the food he is creating. As a chef, Roberto believes that you are always learning and refining so you can create the best product. This is something he instils in all the chefs he trains.
